Cece's how not to: make an ice cream cake

As a 17-year-old with a new boyfriend, I had a sentimental thought on Valentine's Day: I would make my boyfriend an ice cream cake with Spumoni ice cream.
It was our first Vday together and, being the ungirly girl that I am, I decided that Valentine's Day is overrated and that making dinner and dessert would be much more fun than going out. So, the ice cream escapades began.
"How hard could it be?" I thought. "It's just ice cream and cake put together." So I made my batter and baked two separate, thin, circular cakes. The first challenge: getting them out of the sticky pans. Once I did this, they had already crumbled, as they were way too hot when I removed them. But I persevered … because I really wanted ice cream cake.
Next challenge: Spread cold, hard ice cream on hot cake to make it to boyfriend's for dinner on time. I failed. The cake crumbled. But I really really wanted ice cream cake. So I thought "maybe if I just frost it together it will all stick. Voila!"
Third challenge: sticky frosting on hot cake and hard ice cream mess. Mmmmm! Well I did frost that cake and it did hold it together. Now, freeze the cake to keep the ice cream frozen, of course.
Fourth challenge: fit the cake in the freezer. I fit it. But … when I pulled it out of the freezer, some of the top just didn't want to come along. So it decided to stick to the top of the freezer rack. But I really really really wanted ice cream cake! So, while most people probably would have given up and stopped by the store to pick up some already-made cake, I persevered and took the cake in my car to my boyfriend's house.
And finally something went right: I got it there with no frosting on the seat. So, as I walked into my boyfriend's house with my dilapidated ice cream cake in tow, I see him, relaxed, and stirring his homemade Alfredo sauce. Perfect. My cake looks like its been thrown against a wall and he's making homemade cheese sauce.
Like I said, I'm not a very girlish girl. So, although the cake looked horrible and was soggy with Spumoni, he assured me that it tasted delicious. And he must have liked it ok because dessert is still my part of our Vday celebration.
And this year, as we celebrate our fourth Valentine's Day together, I will be following the ice cream cake recipe that is provided below. Hopefully, all of you that don't like braving the maze of lovers in crowded restaurants or admiring pink and red décor all night, will find these recipes helpful in enjoying your Valentine's Day night in.
